Ingredients:
1c blueberries (make sure all stems are removed)
1 banana
1c chopped strawberries
3 cups Greek or whole milk yogurt. To make dairy-free, replace with coconut milk.
1 ½ tbsp granulated sugar or honey
¾ cups water
1 ½ tsp vanilla extract
Red and blue food coloring (optional)
Equipment:
Blender or food processor
Optional: Fine mesh sieveÂ
Popsicle Instructions:
Blend the blueberries, 1c yogurt, ½ tbsp sugar, ½ tsp vanilla extract, and ¼ cup water in a blender or food processor. Optional: add a couple of drops of blue food coloring for a brighter color. Set aside.
Repeat Step 1 with the banana and strawberries, keeping the 3 mixes separate.Â
Fill â…“ of the popsicle mold with the blueberry mix and freeze for at least 30 minutes, until firm. For a smoother popsicle, pour through a fine mesh sieve to separate the larger pieces of fruit that remain. Insert the popsicle sticks.Â
Repeat Step 3 with the other two mixes, leaving the molds in the freezer for at least 30 minutes after each additional layer. You may need to remove and reinsert the popsicle sticks for each additional layer if they cover the top of the mold.
Freeze for 4-6 hours, until fully frozen. Before serving, run the molds under hot water for easier removal.
